Ingredients

  • 250 grams all-purpose flour
  • 250 grams bread flour
  • 1 tablespoon sugar
  • 1 packet active dry yeast (7 grams)
  • 1 teaspoon salt
  • 1 large egg
  • 250 ml milk (warm)
  • 50 grams butter, melted, plus extra for brushing
  • 500 grams potatoes, peeled and boiled
  • 2 tablespoons butter (for potatoes)
  • 100 ml milk, warmed (for potatoes)
  • Salt and freshly ground black pepper, to taste
  • 3 green onions, finely diced
  • 150 grams mozzarella cheese, grated

Instructions

Preparing the Dough

  1. In a stand mixer bowl, combine flours, sugar, yeast, and salt.
  2. Add egg, warm milk, and melted butter, mixing until combined.
  3. Knead dough with a dough hook for 8 minutes until smooth and elastic.
  4. Place dough in a buttered bowl, cover, and let rise for 1 hour until doubled in size.

Preparing the Filling

  1. Mash boiled potatoes with butter, warm milk, salt, and pepper until smooth.
  2. Allow mashed potatoes to cool completely, then stir in green onions.

Assembling the Rolls

  1. Divide dough into 70g portions; flatten each slightly.
  2. Place a spoonful of potato mixture and mozzarella cheese in the center of each dough portion.
  3. Seal dough carefully, placing seam-side down on a lined baking tray.

Baking the Rolls

  1. Cover rolls and allow a second rise for about 40 minutes.
  2. Preheat oven to 180°C (356°F).
  3. Bake rolls for approximately 25 minutes or until golden brown.
  4. Immediately brush rolls with melted butter upon removal from oven.
  5. Allow rolls to cool slightly on a wire rack before serving.
